Peach Pie with Mixed Berries

Ok, I’m excited.
Really, really excited.
The reason I’m excited is because this pie recipe, is MINE. I created it- and … it tasted fine! It fell apart, but I didn’t mind. I was just happy there weren’t any major disasters.
I decided to make my own recipe… TIME OUT: I want to say right now that creating a pie recipe isn’t necessarily rocket science…. just know that I’m aware of that. Now, where were we? … because I wanted a pie, but I didn’t want it to have a pie crust top, I wanted streusel instead. I also wanted to add mixed berries instead of just blueberries or just blackberries to the peaches, and I couldn’t find a recipe that did those things. I also didn’t want to make my own pie crust… so the dough boy and I teamed up on this.
I used a mixture of the peaches I got last weekend in Porter, which were both the Bellaire and the Red Haven variety. Now, the Red Haven peaches are not particularly sweet, so I added more sugar that I probably would have if I had been using really sweet peaches. Next month, if I make this, I’ll probably use only 1/4 cup sugar instead of 1/2 cup. Just use your best judgement. If you want a sweeter pie, use more sugar.
Look at all the delicious fruit inside.

Super Apple Pie and Perfect Apple Pie Crust

I’m aware that this would have been a nice post to get out before Thanksgiving, but as this is the first Thanksgiving that has happened since I started this blog, I learned a few things this year. As Thanksgiving approached and I read other blogs I saw them posting wonderful looking Thanksgiving recipes weeks in advance, and I started to wonder how they were posting such beautiful pictures when the event had not even happened yet. Either they were practicing making the dishes, or they were using pictures from last year. In light of saving money and food I didn’t want to make anything a few weeks early, and I didn’t have any pictures from last year to go from. As Thanksgiving approached its seemed uncomfortable to post anything that wasn’t Thanksgiving related, so what turned out was 2 weeks of everyone opening my blog to stare at my late 20′s goals. For that I apologize.
Now you can open it and stare at a delicious apple pie.
Thanksgiving is my favorite holiday. I think when I was growing up I was a little ashamed to admit that, but now I can say it with confidence. Before when I would say it people would always look at me funny as if it should be something else, and then they would follow up the look with, “Well… mine is Christmas,” like there was something superior about people who like Christmas better. Don’t get me wrong, I LOVE Christmas too, but there is something about Thanksgiving that says family in a way that Christmas sort of misses. Maybe it’s because Christmas is also drowned with a lot of “self” (What am I going to get? I hope they liked my present that I gave them! I want to watch my movie first!) Thanksgiving is merely family and friends coming together to eat, be together, and be thankful. I really love it.

My First Pie- Peach and Blackberry.. Mmm..
Jul 26, 2009 Desserts, Peaches, Pies and Tarts

Until yesterday afternoon, I had never made a pie. I think I must have helped my mom make a pie at one point in my life, but I’m relatively certain that I have never chosen to make a pie myself. Part of this is because I am not a huge fan of pie… or maybe it’s more just that there are other desserts I like much more, and if I spend any amount of time making a delicious dessert, pie is probably not my top choice.

But yesterday, I found myself in my house with an abundance of very ripe peaches (24 to be exact) that my mother-in-law gave me after she went and picked them last week. I didn’t know what I was going to do with them, but I knew they would start to go bad if I didn’t do something… fast! I decided that I would look for recipes with things that included peaches, and I came across a few that I thought looked good from several different websites. I saw recipes for grilled peaches, peach drinks, and peach salads, all of which looked great, but after some review I decided that I wanted to make a pie. I figured it would be fun since I’ve never made one. It turns out that making fruit pie is incredibly easy and I probably should have been making them for a long time now.

I chose a Blackberry Peach Pie recipe and made a few little changes to it. I had fresh blackberries in my freezer (also from my mother-in-law), so the only thing I needed to buy was the pie crust. I wanted to find a Pillsbury pie crust but I couldn’t find them in the store, so I ended up getting some generic type pie crust brand, but it turned out fine. The only problem I had is that when I unrolled the pie crust it started to stick to itself and tear a little, but it was nothing that couldn’t be saved. If I had cared more about the pie I would have used these pie crust tips and made my own, but since this was my first pie I thought I would start off small and ease into it. Maybe next time I’ll attempt the crust.

Molly’s First Blackberry-Peach Pie
4 large very ripe peaches, peeled, sliced, and without the pit
2 cups fresh blackberries
3 tablespoons Corn Starch
1/2 – 3/4 cup sugar (depending on the sweetness of the peaches. If your peaches are sweet then a little less sugar is a good thing)
1/2 tsp cinnamon
2 tablespoons melted butter
pie crust (top and bottom)
Dash more of cinnamon
Dash of nutmeg
Preheat Oven to 450 degrees. Stir up peaches, blackberries, sugar, cinnamon, and corn starch in a bowl until it’s all mixed. Place the bottom pie crust in the bottom of a pie dish. Pour the fruit mixture on top of the pie crust. Place the top pie crust on top of the pie and press around the edges. Brush the top of the pie crust with melted butter and sprinkle with a little cinnamon and nutmeg. Bake at 450 degrees for 15 minutes, and then reduce the temperature in the oven to 350 and bake another 35-40 minutes or until the crust is all brown and beautiful. If the edges of the crust start to get too brown, cover them with foil, leaving the “undone” part exposed.
I hope you like this pie. I thought it was pretty good!
