My First Pie- Peach and Blackberry.. Mmm..

Until yesterday afternoon, I had never made a pie. I think I must have helped my mom make a pie at one point in my life, but I’m relatively certain that I have never chosen to make a pie myself. Part of this is because I am not a huge fan of pie… or maybe it’s more just that there are other desserts I like much more, and if I spend any amount of time making a delicious dessert, pie is probably not my top choice.

But yesterday, I found myself in my house with an abundance of very ripe peaches (24 to be exact) that my mother-in-law gave me after she went and picked them last week. I didn’t know what I was going to do with them, but I knew they would start to go bad if I didn’t do something… fast! I decided that I would look for recipes with things that included peaches, and I came across a few that I thought looked good from several different websites. I saw recipes for grilled peaches, peach drinks, and peach salads, all of which looked great, but after some review I decided that I wanted to make a pie. I figured it would be fun since I’ve never made one. It turns out that making fruit pie is incredibly easy and I probably should have been making them for a long time now.

I chose a Blackberry Peach Pie recipe and made a few little changes to it. I had fresh blackberries in my freezer (also from my mother-in-law), so the only thing I needed to buy was the pie crust. I wanted to find a Pillsbury pie crust but I couldn’t find them in the store, so I ended up getting some generic type pie crust brand, but it turned out fine. The only problem I had is that when I unrolled the pie crust it started to stick to itself and tear a little, but it was nothing that couldn’t be saved. If I had cared more about the pie I would have used these pie crust tips and made my own, but since this was my first pie I thought I would start off small and ease into it. Maybe next time I’ll attempt the crust.

Molly’s First Blackberry-Peach Pie
4 large very ripe peaches, peeled, sliced, and without the pit
2 cups fresh blackberries
3 tablespoons Corn Starch
1/2 – 3/4 cup sugar (depending on the sweetness of the peaches. If your peaches are sweet then a little less sugar is a good thing)
1/2 tsp cinnamon
2 tablespoons melted butter
pie crust (top and bottom)
Dash more of cinnamon
Dash of nutmeg
Preheat Oven to 450 degrees. Stir up peaches, blackberries, sugar, cinnamon, and corn starch in a bowl until it’s all mixed. Place the bottom pie crust in the bottom of a pie dish. Pour the fruit mixture on top of the pie crust. Place the top pie crust on top of the pie and press around the edges. Brush the top of the pie crust with melted butter and sprinkle with a little cinnamon and nutmeg. Bake at 450 degrees for 15 minutes, and then reduce the temperature in the oven to 350 and bake another 35-40 minutes or until the crust is all brown and beautiful. If the edges of the crust start to get too brown, cover them with foil, leaving the “undone” part exposed.
I hope you like this pie. I thought it was pretty good!

I couldn’t stop eating the slices when I was cutting them. Good thing we started with 24!

Yum, I love blackberry peach pies! I think you chose the right pie to start your pie baking career with, you can’t really go wrong with it. Thanks for the recipe, will use it to tweak and improve my existing recipe.
